This model, "KIWAMI" is made of VG-10 Stain Resistant Steel, HONGASUMI Professional Sakimaru Takohiki (Sashimi Knife) for Right Handed, with Professional Handle ,called "Buffalo Horn Handle"(Magnolia Wood Handle & Buffalo Horn Bolster). Highly recommended for Professionals.

The miniaturization of the composition is realized by addition of vanadium. As the element of Cr ,Mo and V produces hard carbide abundantly, wear resistance improves remarkably at the same time, the sharpness of the blade edge sustains extremely long. A good machinability makes it easy to polish even a  hard kitchen knife.

Main photo images show sample without engraving of the brand, "Sakai Kikumori". It will be engraved by chisel one by one for actual products. Please refer to the last image to show the brand name in Kanji letter.
