Yoshihiro White Steel #2 JOUSAKU Edosaki Kanto Style
Edosaki used in Kanto region is specifically designed to fillet from the dorsal side of the eel.It has a short handle and the spine side of the handle bottom is cut off diagonally to fit better in the hand.
